Whole ribbonfish with bright, mirror-silver skin and firm, translucent flesh. A long, fine-boned fish that is prized in East Asian cooking for its delicate flavour and the way it holds together through frying, steaming, or braising.
Pan-fry it in a light dusting of flour for crisp edges and a moist centre, steam it with ginger and spring onion, or braise it in a rich sauce. Ask us to clean and cut it into sections if you would rather skip the prep — just leave a note with your order.
