Bamboo clams — also sold as razor clams — with long, pale shells and a sweet, springy texture somewhere between a scallop and a clam. Prized for their clean flavour and the way they soak up garlic, chilli, and good oil.
Steam them open with ginger and Shaoxing wine, grill them on the half shell with garlic butter, or stir-fry the meat quickly with black bean and chilli. They open in minutes, which makes them one of the easiest shellfish to cook well at home.
Supplied cleaned and chilled. Any that do not open during cooking should be discarded.
